Mini Corn Dog Muffins

These Mini Corn Dog Muffins are the easiest (and cheapest!) way to enjoy your favorite festival food at home! They're super easy to make and a great kid-friendly recipe to make for school lunches!

extra large egg

tbsp honey

cup all purpose flour

cup yellow cornmeal

cup granulated sugar

tsp baking powder

tsp kosher salt

pinch black pepper

0 Cut each hot dog into 5 pieces and set aside. 1 In a large bowl, melt the butter ([adjustable]½[/adjustable] cup, i.e. [adjustable]1[/adjustable] stick) in the microwave. Add the milk ([adjustable]1[/adjustable] cup) and stir. Then add the egg ([adjustable]1[/adjustable] large) and honey ([adjustable]1[/adjustable] tablespoon) and stir until combined. 2 In a separate bowl, mix together the all-purpose flour ([adjustable]1[/adjustable] cup), cornmeal ([adjustable]1[/adjustable] cup), granulated sugar ([adjustable]½[/adjustable] cup), baking powder ([adjustable]2[/adjustable] teaspoons), salt ([adjustable]½[/adjustable] teaspoon), and pinch of black pepper. 3 Pour the liquid mixture into the dry mixture and stir until smooth and combined. 4 Scoop 1 tablespoon batter in a greased mini muffin tin. Press on a hot dog piece into the top but don’t push it all the way to the bottom. 5 Bake at 350°F for 10-12 minutes.View original recipe
