Raspberry Lemonade

Made with freshly squeezed lemons and pureed raspberries, this magical concoction is about as summer as it gets.

To create simple syrup, mix 1 cup granulated sugar and ¾ cup water in a medium sized saucepan. Cook over medium heat until sugar is dissolved, stirring once. Remove from heat and set aside.
In a blender or food processor, blend together 2 cups frozen raspberries and simple syrup until smooth. Pour mixture through strainer to remove seeds. You will need to re-pour mixture through strainer several times to remove all the seeds.
Once seeds have been removed, pour into 2-quart pitcher. Stir in 1 cup lemon juice and 4-6 cups water (depending on your taste & how concentrated you want).
Serve over ice or refrigerate until ready to drink.
For added flavor, add in mint leaves.
