In a large microwave-safe bowl, whisk together granulated sugar ([adjustable]¾ cup), unsweetened cocoa powder (⅔ cup), and cornstarch (3 tablespoons). Add in milk (2 ⅓ cups[/adjustable]), one cup at a time, and whisk until smooth and all lumps dissolve.
Microwave on high for 3 minutes. Once 3 minutes are up, leave bowl in microwave and carefully stir the mixture. Cook at 1 minute intervals, stirring after each minute, for 2 to 3 minutes, or until pudding is shiny and thick.
Remove from the microwave and stir in vanilla extract ([adjustable]1 teaspoon) and semi-sweet chocolate chips (⅓ cup[/adjustable]) until smooth.
Cover pudding with plastic wrap and chill in refrigerator for 4-6 hours until chilled. When placing the plastic wrap, press it directly against the pudding to prevent a film from forming (not just on top of the bowl).
