Preheat oven to 425℉.
Using a sharp serrated edge knife, cut each slice of thick-cut texas toast bread into 3 strips (4 thick-cut slices of Texas toast* total).
In a large bowl, whisk together 2 large eggs, ½ cup milk, ½ teaspoon cinnamon, 1 teaspoon granulated sugar, and 2 teaspoons vanilla extract for about 30 seconds until everything is incorporated.
Dip each slice of bread into the mixture, coating all sides with the egg mixture. Do not allow the bread to soak in the mixture, or you will have soggy bread. Tap off the excess mixture and place each strip on a wire rack to prepare for cooking.
Heat a large skillet to medium heat and add 1 tablespoon butter. Cook 6 strips at a time until each side is golden brown (usually about 1-2 minutes). You may need to add more butter to the pan between batches to prevent from sticking.
Immediately after removing the strips from the pan, place the strips on a baking sheet and place in the hot oven for 10 minutes. This step is not mandatory, but one I prefer as it allows the strips to get a little more crispy.
Serve with maple syrup and enjoy!
