Preheat oven to 350 degrees. Line baking sheet with parchment paper.
In a large bowl, cream together 3/4 cup butter (1 1/2 sticks, softened), 1 cup peanut butter, 1 cup brown sugar, and 1 cup granulated sugar with an electric mixer on medium speed for 30 seconds. Add in 1 teaspoon vanilla and 2 eggs and continue to mix for 10 seconds.
Add 1 1/2 teaspoons baking soda and mix on low speed for 10 seconds. Add 2 1/2 cups all-purpose flour and continue to mix until all flour is incorporated.
Scoop dough into (3 tablespoon sized) balls. Lightly flatten each ball before placing on cookie sheet.
Bake at 350 degrees for 8-9 minutes. They may look underdone, but they will finish baking on the hot cookie sheet after you take it out of the oven. (Of course, because ovens bake differently use your best judgement to keep them in a minute longer if they look severely underbaked.)
After removing from oven, immediately press peanut butter cups into the center of each cookie.
Allow the cookies to cool on the hot baking sheet for 10 minutes before removing them from cookie sheet. If needed, pop the cookies in the refrigerator to help re-harden the chocolate.
Wait until completely cooled and hardened before drawing.
