In a food processor, crush the 16 oz. dry-roasted peanuts for 30 seconds on high speed.
Add in 4 tablespoons extra virgin olive oil and 4 teaspoons honey and continue to blend until desired creaminess.
If needed, scrape down sides of food processor bowl halfway through mixing to incorporate all ingredients.
Store in air-tight container in refrigerator for up to one month.
